腐皮蝦卷 Bean Curd Shrimp Rolls

材料:-
大蝦仁.......................7隻
魚漿/魚蓉..................200g
馬蹄(切細)................4粒
蔥花...........................1棵
芫荽/香菜(切碎)........1棵
胡椒粉.......................1/4茶匙
鹽...............................1/2 茶匙
魚露...........................1/2 茶匙
麻油...........................1/2 茶匙
豆腐皮.......................1張
生粉水.......................適量

做法:-
1. 豆腐皮用濕㕑紙抹淨,把邊緣較硬的地方用剪刀去掉, 然後裁成小塊備用。
2. 大蝦仁切細加入鹽拌勻放入冰箱冷藏20分鐘備用。
3. 將魚漿/魚蓉、馬蹄、蔥花、芫荽碎/香菜碎、蝦仁、胡椒粉、麻油、魚露拌勻成餡料。
4. 把適量的餡料放在豆腐皮上,然後捲起在尾端用適量生粉水黏合,放在熱油鍋半煎炸煮熟便可。
